Ingredients

- 2 cups all-purpose flour
- 2 tsp baking soda

- 2 tsp ginger
- 1 tsp cinnamon

- 0 cup unsalted butter (softened)
- 1 cup brown sugar (packed)
- 0 cup molasses (unsulphured)
- 1 egg (large)
- 1 tsp vanilla extract
- 0 cup granulated sugar (for rolling)
Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Whisk together flour, baking soda, salt, ginger, cinnamon, and cloves.
- Cream butter and brown sugar until light and fluffy. Mix in molasses, egg, and vanilla.
- Gradually add dry ingredients and mix until just combined.
- Chill dough for 30 minutes for thicker cookies.
- Roll dough into balls, coat in granulated sugar, and place on baking sheets.
- Bake 10–12 minutes until crackled and set on edges. Cool on wire rack.
Notes
- For a spicier flavor, increase the amount of ginger or cinnamon to taste.
