Description

Delicious pastry cream filled donuts topped with a sweet glaze.

Ingredients

Scale
  • 2 cups Milk (can substitute with almond or oat milk for a dairy-free option)
  • 3 large Egg Yolks (use a custard or pudding mix as a quicker alternative)
  • 2 tablespoons Cornstarch (can use arrowroot as an alternative if needed)
  • 1/2 cup Sugar (coconut sugar can be used for a lower glycemic index)
  • 2 tablespoons Butter (substitute with non-dairy butter for a vegan option)
  • 1 teaspoon Vanilla Extract (vanilla bean paste can add a more intense flavor)
  • 3 cups Flour (can substitute with gluten-free flour blend)
  • 1/2 teaspoon Salt (essential for enhancing flavors)
  • 2 teaspoons Active Dry Yeast (instant yeast can be used for faster preparation)
  • 1/2 cup Sugar (no substitutes recommended)
  • 1/2 cup Warm Water (activates the yeast)
  • 1 cup Sugar (monitor carefully to avoid burning)

Instructions

  1. Prepare Pastry Cream: Warm milk in a saucepan until it bubbles. Whisk together egg yolks, cornstarch, and sugar until smooth. Gradually add hot milk while whisking. Strain back into saucepan and cook until thickened. Stir in butter and vanilla extract and allow to cool.
  2. Make Dough: Combine warm water, yeast, and sugar in a bowl and let sit until frothy. Add flour, salt, and additional sugar. Mix and knead until smooth. Let rise until doubled in size.
  3. Shape Donuts: Roll out dough and cut out donut shapes. Place on baking sheet and let rise again.
  4. Bake Donuts: Preheat oven to 375°F (190°C) and bake donuts until golden brown. Cool on a wire rack.
  5. Fill Donuts: Fill a piping bag with pastry cream and fill each donut.
  6. Make Sugar Topping: Combine sugar and water in a skillet over medium heat and cook until golden brown. Dip donut tops in the mixture and let sit until hardened.

Notes

  • Make sure to monitor the sugar while cooking the topping to avoid burning.
  • These donuts can be stored in an airtight container for up to 2 days.
