Fish Tacos

Description

Delicious fish tacos with a spicy slaw, perfect for a quick meal.


Ingredients

Scale
  • 1 lb fish fillets
  • 1 tablespoon olive oil
  • 2 teaspoons Szeged Fish Rub
  • 1 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 cup mayo
  • 2 cups thinly-sliced green cabbage
  • 1 cup thinly-sliced red cabbage
  • 3 green onions, sliced
  • 1/2 cup mayo
  • 4 tablespoons fresh-squeezed lime juice
  • 1 teaspoon Green Tabasco Sauce
  • 1/2 teaspoon Vege-Sal
  • 6 Mr. Tortilla 2 net carb multigrain tortillas
  • Optional cut limes for serving

Instructions

  1. Thaw fish overnight in the fridge. Take fish out of the freezer and let it come to room temperature when ready.
  2. Drain fish, and pat dry with paper towels if wet.
  3. Mix the Szeged Fish Rub, ground cumin, paprika, and garlic powder to make the flavorful rub.
  4. Rub the fish on each side first with olive oil, and then with some of the rub mixture.
  5. Whisk together mayo, fresh lime juice, Green Tabasco Sauce, and Vege-Sal to make the spicy dressing.
  6. Slice cabbage and green onions, or measure out coleslaw mix. Toss slaw ingredients together with 4 tablespoons of the dressing.
  7. Preheat Air Fryer to 400F/204C.
  8. Line Air Fryer basket with parchment paper, if using. Put fish on the parchment paper or directly in the basket.
  9. Cook fish for 6 minutes, or until firm to the touch.
  10. While the fish cooks, heat each tortilla about 30-60 seconds in a hot pan, turning once.
  11. Put cooked fish on a cutting board and shred apart with two forks.
  12. Fill each tortilla with pieces of the shredded fish topped with the spicy slaw.
  13. Serve hot, with extra dressing at the table if desired.
  14. Serve with pieces of cut lime to squeeze on tacos.

Notes

  • Adjust lime juice and Green Tabasco Sauce to taste if you’re uncertain of flavor.
  • Coleslaw mix can replace sliced cabbage if preferred.
