Description

A deliciously moist coconut yogurt loaf, perfect for dessert or a snack.


Ingredients

Scale
  • 4 eggs
  • 1 cup vanilla yogurt
  • 1 cup unsweetened shredded coconut
  • 3 tablespoons corn starch
  • to taste sliced almonds (optional)

Instructions

  1. Add all ingredients (minus the almonds) to a bowl. Mix well.
  2. Pour into a lined loaf pan. I lined mine with parchment paper. Optionally, add sliced almonds on top.
  3. Bake in a preheated 350F for 20-25 minutes or until set. Keep an eye on it.
  4. Enjoy with berries on top, coconut whipped cream, or any sweetener of choice.

Notes

  • This loaf is best enjoyed fresh, but can be stored in an airtight container for up to 3 days.
  • Feel free to experiment with different toppings or add-ins like chocolate chips or nuts.
